I resolved this in the following way:
Starting from where my previous email left off:

Acc name: Admin / Store folder: Dave / Acc type: Admin
Acc name: Dave / Strore folder: Dave_2 / Acc type: Standard

1) Delete account Dave (make sure there is nothing here you want to keep)
2) Rename Admin back to Dave

We now have:
Acc name: Dave / Store folder: Dave / Acc type: Admin

3) Create new Admin account

We now have:
Acc name: Dave / Store folder: Dave / Acc type: Admin
Acc name: Admin / Store folder: Admin/ Acc type: Admin

4) Finally set Dave to be a standard user account

End result:
Acc name: Dave / Store folder: Dave / Acc type: Standard
Acc name: Admin / Store folder: Admin / Acc type: Admin
