Default Views keep changing and how do you enter data in other columns

1. Windows Mail, like other folders, has a 'Views' selection. Fine. I select
a prefered (lists) go away. Come back and POW I have to select my preferred
view all over again. How do I get it to STAY?

2. Another potentially nice feature is the ability to select the column
headers. I chose Name, email address, email 2, email 3. Now how do I put data
into the new columns? I kind of expected new lines to appear in each
contacts' details I suppose but nothing is added anywhere. I am dotty or this
feature unfinished?
