Default How to set File Associations for Open and Edit

How does one set the file type associations for the Open and Edit options in
the menu that appears when I right click on a file?

Vista seems to have hidden the FileTypes tab in the options dialog of
WinExplorer.

That takes care of the program for opening the file and provides the options
in the 'open with' menu. How does one set the default program for the 'edit'
entry on the menu? I'm trying to redirect the edit command for script files
from notepad to a script editor.

No, that doesn't help. The link goes to a writeup for adding context menu
items to IE, I want to add/modify the edit menu item associated with a
specific file type.
